No Bake Oatmeal Balls

No bake Oatmeal balls. Such yummy deliciousness that packs a punch of protein for energy and galactagogues for lactation. Need a healthy snack with a hint of sweet? These are one of my go-to snacks. These no bake oatmeal balls are so quick to mix together and my kids love to help make them, then eat them. We get the addition of a cooking/math lesson to go with a yummy snack that’s more of a treat. What’s best, I don’t feel guilty at all for eating one…. or a few.

This recipe makes approximately 12 balls around 1 inch in diameter. I usually just use a spoon, scoop some out and roll it in my hands. If they are too sticky, add some more oats. If they don’t stick enough, add some more peanut butter and/or honey.

There are a few optional ingredients in here. You can skip everything except the oatmeal, peanut butter and honey. I like to pack a few more nutrient packed ingredients like the flaxseeds and chia seeds. I’m a glutton for chocolate so I usually add chocolate chips to mine, as well. If you want to pack more “energy” you can add protein powder, like what you might put in a protein shake.

No Bake Oatmeal Ball Base

1 and 1/4 cup quick oats

1/2 cup peanut butter (or almond butter)

1/4 cup honey

1 teaspoon vanilla

Optional Nutrients

1 tablespoon ground flaxseeds (optional)

1 tablespoon chia seeds (optional)

Optional Toppings

1/4-1/2 cup mini chocolate chips, mini m&m’s, mini Reeces

1/4-1/2 cup dried cranberries, raisins, blueberries, strawberries, pineapple, mango, peaches

1/4-1/5 cup coconut flakes, chopped almonds, walnuts, macadamia nuts, peanuts, any nuts

2 tablespoons cocoa powder, protein powder

The really fun thing about no bake oatmeal balls is you can switch out the additives and play with them to be what you want them to be. Keep in mind, the more things you add the drier the recipe so they will have a harder time sticking together. I try to stay with no more than 3 extra ingredients.

Blueberry Crisp: Base plus dried blueberries, cinnamon and vanilla.

Sweet and Salty: Base plus crushed pretzels, mini chocolate chips, almonds

Double Chocolate: Base plus cocoa powder, mini chocolate chips

Death by Chocolate: Base plus cocoa powder, mini chocolate chips, dip balls in melted chocolate

Strawberries and Shortcake: Base plus dried strawberries, macadamia nuts

White Chocolate Macadamia Nut: Base plus macadamia nuts, mini white chocolate chips

Oatmeal Raisin Cookie: pecans, coconut, raisins, cinnamon
